Coconut Sphere with Mango Sorbet & Berries

Ingredients 

14 ounces full-fat coconut milk

2 tablespoons sugar

2 teaspoons gelatin

1 teaspoon vanilla extract

Directions

  1. Whisk together coconut milk, sugar, gelatin and vanilla extract. Microwave for 40 seconds to melt the gelatin. Set aside for 15 minutes to cool. 
  2. Fill a balloon with air, and use a pipette or a syringe to fill it with the coconut mixture. Tie the balloon. 
  3. Roll the balloon on liquid nitrogen until the shell hardens. Keep it in the freezer for at least an hour. 
  4. Remove the skin and serve with mango sorbet and fresh berries.
