Coconut Sphere with Mango Sorbet & Berries
14 ounces full-fat coconut milk
2 tablespoons sugar
2 teaspoons gelatin
1 teaspoon vanilla extract
- Whisk together coconut milk, sugar, gelatin and vanilla extract. Microwave for 40 seconds to melt the gelatin. Set aside for 15 minutes to cool.
- Fill a balloon with air, and use a pipette or a syringe to fill it with the coconut mixture. Tie the balloon.
- Roll the balloon on liquid nitrogen until the shell hardens. Keep it in the freezer for at least an hour.
- Remove the skin and serve with mango sorbet and fresh berries.
